LalBrew Novalager 11g
LalBrew Novalager was developed in collaboration with Renaissance BioScience in Vancouver, Canada. Renaissance is a biotechnology company that uses classical, non-GMO breeding techniques to create new yeast strains with desirable properties, solving common problems in the brewing industry.
LalBrew Novalager is primarily designed for the production of lager beers at higher temperatures, while avoiding some of the more common problems associated with lager production. More specifically, LalBrew Novalager will allow for shorter fermentation times and will produce only minimal diacetyl. An excellent yeast strain for breweries that may not have the ability to brew with the level of temperature control required by traditional lager yeasts.
LalBrew Novalager is particularly innovative in that it forms a new category of lager yeast. Without going into too much detail, lager yeasts are classified into two categories, with type two yeast being by far the most commonly used in the brewing industry. Renaissance's breeding work, combining type two lager yeast with a domesticated ale yeast strain, has yielded a third category, a type three lager yeast. This new strain contains a larger proportion of genetic material derived from ale yeast, which leads to its more desirable fermentation characteristics.
