LalBrew NovaLager 11 g – lager yeast for clean pilsner at warmer temperatures
LalBrew NovaLager from Lallemand is a dry lager yeast made for pilsner and other lagers at higher temperatures than traditional lager yeast. It gives shorter fermentation times and produces only minimal diacetyl, and suits brewers who don't have the temperature control traditional lager yeast requires. It also works well for Cold IPA.
NovaLager was developed with Renaissance BioScience in Vancouver, Canada, which uses classical, non-GMO breeding to create new yeast strains. Lager yeasts are usually divided into two categories, with type 2 the most widely used in the brewing industry. By crossing a type 2 lager yeast with a domesticated ale yeast, Renaissance created a new category, a type 3 lager yeast. It carries a larger share of genetic material from ale yeast, which gives it more favourable fermentation characteristics.

Frequently asked questions about LalBrew NovaLager
Can I brew pilsner without a fridge using NovaLager?
Yes. NovaLager ferments at 10–20 °C, so pilsner is possible without a fridge. Our kits with NovaLager are designed for 14 days at 18 °C. Pilsner still benefits from some time cold after fermentation.
How many packs do I need for 20–25 litres?
The pitching rate is 50–100 g per hL. That equals 10–20 g for 20 litres and 12.5–25 g for 25 litres, so one to two 11 g packs.
Does NovaLager produce diacetyl or sulphur?
NovaLager produces only minimal diacetyl and little sulphur, both common off-flavours with traditional lager yeast.
Is NovaLager an ale yeast?
No. It is a new type 3 lager yeast, bred from a lager yeast and an ale yeast without genetic modification. It carries more genetic material from ale yeast than regular lager yeast, which is why it tolerates higher temperatures.
