Description

LalBrew NovaLager 500g – hybrid lager yeast for clean lagers

LalBrew NovaLager was developed together with Renaissance Bioscience in Vancouver, Canada. Renaissance is a biotechnology company that uses classical, non-GMO breeding techniques to create new yeast strains with desirable traits that solve common problems in the brewing industry. The 500 g pack is intended for breweries and larger batches.

Please note: This product is only available in Norway.

LalBrew NovaLager is primarily designed for brewing lager at warmer temperatures while avoiding some of the most common problems in lager production. The yeast gives shorter fermentation times and produces only minimal diacetyl. It is therefore a good fit for breweries that lack the level of temperature control traditional lager yeast requires.

NovaLager forms a new category of lager yeast. Lager yeast is traditionally divided into two groups, with group two being by far the most widely used in the brewing industry. Renaissance's breeding work combined a group two lager yeast with a domesticated ale yeast and produced a third group (Group III). The new strain carries a larger share of genetic material from ale yeast, which gives it more desirable fermentation properties.

Specifications

Frequently asked questions about LalBrew NovaLager 500g

What temperature should NovaLager ferment at?

Lallemand specifies 10–20 °C. Brewshop's own Fresh Wort Kits with NovaLager are designed for 14 days at 18 °C, so the yeast can be used without a chilled fermentation room.

How much yeast do I need per batch?

The recommended pitch rate is 50–100 g per hectolitre of wort, so a 500 g pack covers 500–1000 litres. High gravity or high adjunct worts may need more yeast and yeast nutrient.

Do I need to rehydrate the yeast?

No. Lallemand recommends sprinkling the yeast evenly over the wort while the fermenter is being filled, and reports no significant difference compared with rehydration for NovaLager.

How do I store an opened pack?

Store the yeast dry below 4 °C. An opened pack should be resealed and used within three days, unless it is vacuum sealed again immediately after opening.
