LalBrew Farmhouse – hybrid saison-style yeast 11 g from Lallemand
LalBrew Farmhouse is a non-diastatic hybrid strain from Lallemand, selected to produce traditional saison flavour and aroma in dry farmhouse beers. The yeast gives fruity notes, pepper and clove, and has high attenuation.
Renaissance Yeast in Canada used classical, non-GMO methods to remove the STA1 gene, which is responsible for the diastatic activity of typical saison yeast. Normal sugar conversion is retained, so the beer finishes dry. The yeast is therefore STA1-negative and GMO-free and does not carry the cross-contamination risk of typical saison strains. Patented technology from the University of California Davis also means the yeast does not produce sulphur flavours.
