LalBrew Farmhouse Yeast
This non-diastatic hybrid strain was selected to produce traditional Saison flavors and aromas for brewing dry and delicious Farmhouse ales year-round. The yeast strain is STA1-negative and GMO-free, and will not contribute to the cross-contamination risk associated with typical Saison strains.
Renaissance Yeast in Canada utilized classical, GMO-free methods to remove the STA1 gene, which is responsible for the diastatic activity of Saison yeast. Care was taken to maintain normal sugar conversion to produce dry saisons. In addition, patented technology from the University of California Davis (USA) ensures that the yeast strain will not produce sulfuric flavors, thereby enhancing the aromatic properties of a classic Saison yeast.
LalBrew Farmhouse contributes a traditional flavor and aroma with fruity notes, pepper, and clove, and high attenuation.
