Simcoe is an American hop variety released by Yakima Chief Ranches in 2000. It has high alpha acid and a complex aroma of grapefruit, passion fruit, stone fruit and pine, with earthy and resinous notes. Simcoe is used both as a bittering and an aroma hop, and adds depth and character to IPA, pale ale, porter and other beers with a distinct hop profile. This 5 kg pack of pellets is intended for breweries and others brewing larger volumes.

How to use Simcoe
Early in the boil, Simcoe provides bitterness. The biggest aroma impact comes from late additions, the whirlpool and dry hopping. Simcoe can carry a beer on its own, but is often paired with Citra, Mosaic or Amarillo.
