Frequently asked questions about Simcoe
What aroma does Simcoe give?
Simcoe gives a complex aroma of grapefruit, passion fruit, stone fruit and pine, with earthy and resinous notes. The fruitiness comes through most clearly with late additions and dry hopping.
Can Simcoe be used for bittering?
Yes. Simcoe typically has 12–15% alpha acid and can be used both for bitterness early in the boil and for aroma in the whirlpool and dry hop.
How high is the alpha acid in Simcoe?
Yakima Valley Hops gives a typical range of 12–15% for the variety. Alpha acid varies from year to year. The alpha acid for the lot you receive is stated in the product title. Use that figure when calculating bitterness.
How should I store the hops?
Store the hops cold, dark and airtight, preferably in a freezer. We keep our hops vacuum-packed in a freezer room at −18 °C, and the quality holds for several years. We prioritise hops from the two most recent harvests, but older hops can be just as good if stored correctly. Read more in the article on hop shelf life and storage from Yakima Valley Hops (PDF).
