Enoferm Alpha 2.5g / 2.5HL for malolactic fermentation
Enoferm Alpha™ is a naturally selected lactic acid bacteria from Lallemand, developed in collaboration with the Institut Français de la Vigne et du Vin (IFV). It has been specifically chosen for its ability to perform safe and efficient malolactic fermentation (MLF) under varying conditions, in both red and white wines.
Alpha improves the wine's aroma complexity and mouthfeel, reduces green notes, and also acts as a bioprotective tool against Brettanomyces, especially when inoculated early.
Benefits of Enoferm Alpha:
- Fast and safe MLF – even with low malic acid content (>0.7 g/L)
- Direct inoculation – no rehydration necessary
- Low production of volatile acids and no biogenic amines
- Reduces the risk of unwanted Brettanomyces growth
Technical characteristics:
- pH tolerance: > 3.2
- Alcohol tolerance: up to 15.5%
- SO₂ tolerance: up to 50 mg/L total (be aware of molecular SO₂ at low pH)
- Temperature: > 14 °C
- Low nutrient requirement, good implantation
- Oxygen sensitive – avoid excessive exposure
- Does not produce cinnamoyl esterase (reduces risk of ethylphenol)
One sachet is tailored to the correct amount of HL as indicated on the label. Reduced dosage or alternative inoculation methods may impair performance.
