Dry yeast for brewing – ale, lager, kveik and cider
Dry yeast is dehydrated brewing yeast that keeps for a long time and is easy to use, and many strains can be sprinkled straight onto the wort. Here you will find dry yeast from Fermentis, Lallemand, Mangrove Jack's, AEB Brewing, Kveik Yeastery, WHC Lab and Omega Yeast, with strains for pale ale and IPA, pilsner and lager, wheat beer, Belgian beer, sour beer, kveik and cider. Sachets range from 5 to 25 g, and some strains also come in 100 g.

The temperature you can hold decides a lot. Without cooling, kveik is the easiest choice because it ferments cleanly at high temperatures. Traditional lager yeast wants 10–18 °C, while LalBrew NovaLager is designed for brewing pilsner at higher temperatures. For very strong beers there is the SafBrew range from Fermentis, blends of yeast and enzymes, where HA-18 tolerates up to 18 % ABV.

Frequently asked questions about dry yeast
How much dry yeast do I need per litre?
Fermentis recommends 50–80 g per 100 litres for SafAle US-05 and S-04, so one 11.5 g sachet covers about 15–23 litres. For kveik from Kveik Yeastery the rate is 30 g per 100 litres, so one 7 g sachet covers about 23 litres. Lager yeast is pitched higher, often two sachets for 20 litres.
How long does dry yeast keep?
Dry yeast keeps much longer than fresh yeast, and the best-before date is on the pack. Mangrove Jack's recommends storing the sachets in the fridge.
Can I brew lager without cooling?
Yes, with the right yeast. LalBrew NovaLager was developed for pilsner at higher temperatures and produces little diacetyl. Dried Lutra Kveik ferments cleanly at 20–35 °C and is often used for pseudo-lager.
Which dry yeast is best for cider?
SafCider AB-1 from Fermentis can be used for all types of cider. Mangrove Jack's M02 brings out a lot of fruit, and M08 is made for a clean, dry cider. Both are sprinkled straight into the juice, and one sachet covers up to 23 litres.
