Finings for breweries – kettle finings, post-fermentation finings and chill haze
Here you will find finings in trade packs for breweries and wine and cider makers: carrageenan kettle finings (Protafloc, Koppakleer and Polyclar Brewbrite), post-fermentation finings (Super F and gelatine), DeHaze against chill haze and silica sol. Most come from Murphy & Son, and pack sizes range from 500 g to 25 kg.
Please note: The professional range is only available in Norway.
How to choose the right finings
The choice depends on where in the process you want to clarify. Kettle finings drop out proteins as the wort cools, while post-fermentation finings gather yeast and particles in the beer. Chill haze forms when beer is chilled and has to be prevented before packaging.
| Product | When | Manufacturer's dosage | Pack size |
|---|---|---|---|
| Protafloc tablets | Last 10 minutes of the boil | 1/2–2 tablets per hl | 2 kg |
| Koppakleer granules | Short boil or in the whirlpool | See technical data sheet | 2 kg |
| Polyclar Brewbrite | Last 5–15 minutes of the boil or in the whirlpool | 1.5 g per 10 litres | 25 kg |
| DeHaze | In the wort at the start of fermentation | See technical data sheet | 1 kg |
| Super F | After fermentation, best at 5 °C | 75–175 ml per hl | 5 kg and 25 kg |
| Gelatine powder | After fermentation | 0.5–1.5 g per 10 litres | 500 g |
| Vinoferm silica sol | After fermentation | 2.5–5 ml per 10 litres | 1 litre |
Super F gives high clarity within 48 hours and can be used for beer going into bottles, cans and kegs. It also works in dry-hopped beer when most of the hops are removed before adding it. Polyclar Brewbrite is a blend of carrageenan and PVPP and is removed with the trub.
Frequently asked questions about finings
What is the difference between Protafloc and Koppakleer?
Both are carrageenan products that drop out proteins as the wort cools. Protafloc comes as tablets added in the last 10 minutes of the boil. Koppakleer is a granule that needs a shorter boil and can also be added in the whirlpool.
How do I prevent chill haze?
Chill haze comes from proteins that precipitate when beer is chilled. DeHaze is added to the wort at the start of fermentation and targets the haze-forming proteins. Murphy & Son state that it is also used for gluten-free beer.
How much gelatine do I need per litre of beer?
The gelatine powder is dosed at 0.5 g per 10 litres for light fining and 1.0 g per 10 litres for normal fining. After heavy dry hopping you can go up to 1.5 g per 10 litres, but start low.
Do you sell finings in small packs?
Yes. Finings for homebrewing includes Protafloc in 20 tablets, 50 g gelatine and 100 ml silica sol, among others. This page has the pack sizes for breweries.
How do I get trade prices?
