How to choose Fermentis yeast
- Neutral ale and IPA: SafAle US-05 is an American ale strain that produces clean, neutral and well-balanced beer. K-97 and S-33 cover other ale styles, and S-33 is used in NEIPA among others.
- British styles: SafAle S-04 is an English strain with fast fermentation, fruity and floral notes and good flocculation.
- Lager and pilsner: SafLager W-34/70 comes from Weihenstephan in Germany and is widely used in the brewing industry. S-189 comes from Hürlimann in Switzerland and gives a fairly neutral lager. S-23 from Berlin gives a fruitier, more estery lager.
- Belgian and wheat: SafAle BE-256 is made for Belgian beers such as abbey ales, T-58 for Belgian styles, WB-06 and W-68 for German wheat beer.
- Very high attenuation: SafAle HA-18 is a blend of yeast and enzymes for highly attenuated beers such as barley wine.
- Cider: SafCider AB-1, AC-4, AS-2 and TF-6 in 500 g.

Frequently asked questions about Fermentis yeast
What is the difference between 100 g and 500 g?
The strain is the same. 100 g suits smaller brewhouses and breweries that want to try a strain, while 500 g is the standard pack for production.
Which Fermentis yeast is best for pilsner?
SafLager W-34/70 is the most common choice for pilsner and lager. S-189 gives a fairly neutral profile, while S-23 gives a fruitier lager.
Are Fermentis and SafAle the same?
Fermentis is the producer. SafAle, SafLager, SafBrew and SafCider are the series. US-05 is therefore a SafAle yeast from Fermentis.
