Description
Ibérico Secreto from Spain – marbled pork for the grill and pan
Secreto is one of the most sought-after cuts of the Ibérico pig. The name means «secret» and comes from the fact that the cut is hidden between the neck and the foreleg. It is fairly thin, rich in intramuscular fat and very juicy, and works just as well on the grill as in a frying pan.
Please note: This product is only available in Norway.
Meat is sold only in our shop in Trondheim (Bratsbergvegen 2E), not online.
Origin and quality
Ibérico is often called the pig's answer to Wagyu. The free-range Ibérico pigs are known for their natural diet and for developing a lot of intramuscular fat. This gives the meat heavy marbling, a delicate fat structure and a deep, nutty flavour.
What is secreto?
Secreto is hidden between the shoulder and the rib area. Many compare it to a well-marbled ribeye, but secreto has its own sweetness and depth of flavour that is typical of Ibérico.
How to cook secreto
- Fry or grill quickly over high heat for a good crust and a juicy interior
- On a pellet grill, 200–230°C works well
- Serve pink to light medium, at a core temperature of 60–63°C
- Salt is often enough. Chimichurri, good butter or a simple pepper sauce go well with it
- Serve with potatoes, grilled vegetables or a fresh salad, or as tapas
