Whole cinnamon sticks, approx. 25 g. Cinnamon is a classic spice in Christmas beer, winter ales and spiced mead, and gives a warm, sweetish spice aroma. Whole cinnamon releases its flavour more slowly than ground cinnamon and is easy to remove again, so you have better control over how spicy the beer gets.

Frequently asked questions about whole cinnamon
When do I add cinnamon to beer?
Cinnamon can be added in the last minutes of the boil, or put in the fermenter after primary fermentation. The boil sanitises the spice. If you add it after the boil, sanitise it first, for example by soaking it in a little vodka.
How much cinnamon should I use?
Start carefully and taste as you go. Cinnamon can quickly dominate, and it is easier to add more than to take it away.
