Lallzyme EX - Lallemand
Lallzyme EX™ is a specially developed enzyme from Lallemand for maceration of red and rosé wines where improved color stability, better mouthfeel, and gentle extraction are desired. It is particularly useful for wines to be bottled early, or when grapes have not reached full phenolic ripeness.
The enzyme blend contains balanced pectinases, as well as galactanase and endo-cellulase – key enzymes that promote controlled release of polyphenols and polysaccharides bound to tannins. This not only ensures even extraction but also improves the structure and sensory properties of the wine.
