Raspberry purée from Fruits Rouges & Co in France, made from fruit harvested at the right ripeness. The purée is pasteurised and can be poured straight into the fermenter. It suits fruit beer, sour beer, cider and mead where you want a clear raspberry flavour and colour.
Quality
All the fruit meets Fruits Rouges & Co’s requirements for brix, size, colour and pesticide residues, among other things. To ensure consistent quality, the finished product is inspected at the end of production and taste-tested, so that flavour and colour match fresh fruit.

When should I add the purée?
Fruit is usually added after the most vigorous fermentation, after about a week. Let the beer ferment for at least another week afterwards so the yeast can consume the sugar from the fruit.
How much purée do I need?
As a rough guide, use 1–4 kg of fruit purée per approx. 25 litres of beer. For sour beer we recommend at least 2–3 kg per 25 litres.
Does the purée need pasteurising before use?
No. The purée is already pasteurised and can be poured straight into the fermenter.
