Carafa Special Type 3 - Weyermann
Carafa Special is a chocolate malt that is de-husked before malting and roasting. This reduces astringency and bitterness, while giving the beer a coffee-brown color, a coffee-like bouquet, a dark aroma, and increased body and mouthfeel. Notes of toffee, cocoa, and dark chocolate. Normally used in 1-5% of the total grist.
