To use oak chips when brewing beer, they must first be sanitised by, for example, soaking them in spirits or boiling them in water for a few minutes. You can then add the chips to your fermenter. You can also add the chips to your keg after the beer has finished fermenting, to give it an oak flavour. It is important to remember that oak notes can be very powerful, so it might be a good idea to start with only a small amount of chips and gradually increase the amount to find the right balance for your beer. The more chips, the shorter the contact time required.
