Flaked Torrefied Rice consists of rice grains that have been heat-treated at high temperatures, resulting in the gelatinization of the starchy endosperm, and then flaked. It lightens the wort color, reduces protein levels, and imparts a characteristic dryness to the finished beer.

Rice has a low gluten content, so it can be used to make low-gluten products.
