Château rice flakes - Castle Malting
Château Rice Flakes are a pre-gelatinized brewing adjunct produced from selected rice grains. The rice grains are steamed and rolled to open the starch structure, allowing them to be added directly to the mash without the need for pre-boiling or grinding. Flaked rice has a low protein and fat content, but a high carbohydrate content, which affects both the body and flavor of the finished beer.
Properties
Château Rice Flakes help give the beer a lighter body and a cleaner taste. The result is a crisp and refreshing beer with a dry finish, clean mouthfeel, and light color. Compared to flaked corn, flaked rice contributes less color and a drier finish to the beer.
Since the product is pre-gelatinized, it can be added directly to the mash without pre-boiling or other pre-treatment.
Application
Flaked rice is particularly well-suited for:
- American Lager
- American Light Lager
- Light and easy-drinking beer styles
Recommended usage is up to 20% of the total malt quantity. For higher percentages, it should be checked that the mash has sufficient diastatic power to convert the starch, and to ensure good conditions for filtration and sparging.
