Flaked rice 25 kg (2–3 EBC) from Castle Malting – for light, crisp beer

Château Rice Flakes from Castle Malting are a pre-gelatinised brewing adjunct made from selected naked rice kernels. The whole kernel is steamed and passed through heated rollers to open the starch structure. Flaked rice is low in lipids and proteins and high in carbohydrates, which must be taken into account in the brewing process. The 25 kg bag is intended for breweries.

Usage

Flaked rice is used in American lagers, American light lagers and light beers. With a high share of flaked rice, check that the mash has enough diastatic power to convert the starch, and that the filter bed in the lauter tun performs as it should.
