ISY Enhance 1kg – more body, mouthfeel and balance in beer

ISY Enhance is an inactive yeast autolysate from AB Vickers, part of Lallemand. It is designed to give beer more body, mouthfeel and drinkability, and a smooth, clean flavour profile that brings out the aromas and balances the taste. With ISY Enhance, breweries can lift both low-alcohol and alcohol-free beers.

How to use ISY Enhance

The data sheet gives 10–60 g per hl. Use 10–30 g/hl in light beer styles and high-sugar fermentations such as hard seltzer, and 30–60 g/hl in fuller-bodied and hoppy beers.

Add it in a single addition: to the kettle at the end of the boil, to the fermenter during wort transfer or late in fermentation (for example during dry hopping), or en route to the maturation tank. The powder can be added directly or rehydrated in 10 times its weight of water first. It is heat stable and can be dissolved in hot water (80–100 °C). Use a higher dose in the kettle, as some may be lost in the trub.

What is an inactive yeast autolysate?

It is yeast that has been broken down and is no longer alive. ISY Enhance therefore does not ferment, but adds compounds from the yeast that give the beer more body and a rounder taste.

Which beers benefit most from ISY Enhance?

Alcohol-free and low-alcohol beer and light styles, which often come across as thin. It is also used in hoppy beers to soften harsh hop flavours.
