LalBrew Pomona Modern Hybrid IPA Yeast 500 g – hybrid yeast for hop-forward IPA
LalBrew Pomona is a hybrid yeast from Lallemand selected for flavour and fermentation performance in hop-forward beers. Named after the goddess of fruit trees, the strain produces a juicy flavour profile with notes of peach, citrus and tropical fruit. It was developed by Lallemand's partner Escarpment Laboratories (Canada) using advanced yeast breeding and fermentation of high-ABV, heavily hopped IPA. The result is a fruity, stress-tolerant and robust strain that enhances biotransformation and haze in modern IPA styles.

A hybrid yeast
Pomona was developed by crossing a highly aromatic strain with a robust and reliable strain. A process called adaptive laboratory evolution was then used to adapt it to IPA fermentation conditions, improving biotransformation and haze.

What temperature should Pomona ferment at?
Lallemand gives 18–22 °C as the optimal range. Under standard conditions (12 °P wort at 20 °C) fermentation is vigorous and can be complete in 4–5 days.
Which beers is Pomona for?
Pomona is made for hop-forward beers, especially modern IPA styles where you want fruity aroma, biotransformation and haze.
How much yeast should I use?
The recommended pitch rate is 50–100 g per hl of wort. Weigh the yeast, as pitch rate calculators designed for liquid yeast can lead to heavy overpitching.
Does the yeast need rehydrating?
No. According to Lallemand, rehydration should only be used when your equipment does not easily allow dry pitching.
Can I use the yeast after the best before date?
Yes. Dry yeast kept cold stays in good condition well beyond the date.
