Lalvin EC-1118 Champagne 500 g – robust yeast for wine, cider and sparkling
Lalvin EC-1118 from Lallemand is a neutral, robust and versatile yeast for red, white and rosé wine and cider. The strain was selected in Champagne and is widely used both for Champagne base wine and for secondary fermentation in the bottle. It contributes little yeast character, starts quickly and tolerates high alcohol. The 500 g pack is intended for breweries, cideries and winemakers.

EC-1118 is well suited to cider, sparkling wine and fruit wine, and to restarting a stuck fermentation.

How to use EC-1118
Lallemand recommends rehydrating the yeast. Sprinkle the yeast evenly into clean water at 35–40 °C, ideally with Go-Ferm Protect Evolution added to the water, and leave for 20 minutes. Adjust the temperature gradually by mixing in a little must, so the difference to the must is less than 10 °C, then pitch. The whole process should take less than 30 minutes. The must should be no colder than 18 °C when the yeast is added.
Storage: Dry, ideally at 4–12 °C, in the unopened vacuum pack.
