Lalvin MT01 25 g – lactic acid bacteria for malolactic fermentation in wine

Lalvin MT01 from Lallemand is a freeze-dried culture of the lactic acid bacterium Oenococcus oeni for malolactic fermentation (MLF), in which malic acid is converted into softer lactic acid. The strain was isolated in a well-known French sparkling wine region and is particularly suited to very acidic wines. It is suitable for sparkling base wine, white and rosé wine, and red wine with low pH when a neutral sensory impact is wanted. One 25 g sachet is dosed for 25 hL of wine.

How to use MT01

MT01 is produced with Lallemand's «standard» process and must be activated and acclimatised in two steps before it is added to the wine. The protocol, including activation medium, yeast and bacterial nutrient, is in the specifications from Lallemand.

Frequently asked questions about Lalvin MT01

What is malolactic fermentation?

It is a bacterial conversion of malic acid into lactic acid. The wine becomes less acidic and more stable. It is widely used in red wine and in some white wines and sparkling base wines.

How much wine does one sachet treat?

One 25 g sachet is intended for 25 hL of wine (the final volume to be inoculated).

Can MT01 be added directly to the wine?

No. MT01 must be activated and acclimatised in two steps before use. Follow the protocol in the specifications from Lallemand.

What conditions does MT01 tolerate?

After activation and acclimatisation it tolerates below 14 % alcohol, pH above 2.9 and total SO2 below 50 mg/L, at temperatures above 15 °C. Several limiting factors at once increase the inhibition.
