Lalvin DV10™ is a yeast strain selected for its strong fermentation capacity over a wide temperature range and its relatively low nitrogen requirement. It is especially known for performing under demanding conditions, including low pH, high total SO₂ content, and low temperatures.
The yeast is characterized by low foaming and low production of volatile acids, making it easy to use and providing stable results. As a clean fermenter, Lalvin DV10™ preserves the raw material's inherent qualities and yields ciders with a clear and distinct fruit character.
