Monkey Brew Darwin IPA – all-grain NEIPA beer kit

In collaboration with the craft brewery Monkey Brew, you can brew the juicy hop bomb Darwin IPA at home. Darwin IPA is a full-bodied and aromatic NEIPA with lots of tropical fruit and a hazy appearance. A full 500 grams of hops go in, and double dry hopping plus plenty of whirlpool hops give an intense aroma. The beer is hopped with Centennial, Chinook, Mosaic and Citra.

Monkey Brew is an independent craft brewery in Trondheim, Norway. They brew everything from intensely hopped IPAs to kettle sours with real fruit, as well as barrel-aged imperial stouts and sours matured in foeders and oak barrels. Their philosophy is «Always Evolve!».

Uncrushed malt

For quality and shelf life, the malt is supplied uncrushed. With your own grain mill you can crush the malt right before brewing and have completely fresh ingredients on brew day.

How much beer does the kit make?

About 22–23 litres of finished beer. The recipe assumes 29 litres pre-boil and about 25 litres into the fermenter.

Which hops are used?

Centennial, Chinook, Mosaic and Citra, 500 grams in total. Much of the hops go into the whirlpool and two rounds of dry hopping.

How should the beer be fermented?

With two packs of S-04 dry yeast for 14 days at 19 °C.

Should Darwin IPA go in a keg or bottles?

Hop-forward NEIPA is best fresh and handles oxygen poorly. A keg is the best choice. If you bottle it, keep it cold and drink it within a couple of weeks.
