Sodium bicarbonate, NaHCO3, also known as baking soda, is used in water treatment to raise pH and reduce acidity. In brewing, it is most relevant for dark beers such as stout and porter, where the dark malt pulls the pH down. Sodium bicarbonate also adds sodium. It comes in a 25 kg sack and suits breweries and others who use large quantities.

When the mash pH is too low, typically in dark beers such as stout and porter. The ideal mash pH is 5.2–5.6.
What is the difference between sodium bicarbonate and calcium carbonate?
Both raise pH. Sodium bicarbonate adds sodium, while calcium carbonate (chalk) adds calcium.
How much should I use?
It depends on your water and the beer you are brewing. Brewing software such as Brewfather calculates the salts from your water profile and target profile.
