SafAle WB-06 500 g – dry yeast for wheat beer
SafAle WB-06 from Fermentis is a versatile yeast strain for wheat beer, both German weizen and Belgian wit. It gives a phenolic and fruity profile with notes of banana and apple, and often ends in a highly attenuated, dry beer with a hint of acidity and crispness. The 500 g pack is intended for breweries and others brewing large volumes.

How to use WB-06
The yeast can be pitched directly into the fermenter, or rehydrated first in sterile water at 25–29 °C for 15–30 minutes before pitching.
Store unopened yeast below 24 °C for up to 6 months, and below 15 °C for longer storage. Shelf life is 4 years from production. Reseal an opened pack, keep it at 4 °C and use it within 7 days.

How much WB-06 do I need per 1000 litres?
Fermentis recommends 50–80 g per 100 litres. That equals 0.5–0.8 kg per 1000 litres.
What does it mean that WB-06 is diastaticus?
Diastaticus yeast can break down dextrins that normal brewing yeast leaves behind. This gives high attenuation and a dry beer. Make sure the gravity is stable before packaging, and clean your equipment thoroughly after use.
Is WB-06 suitable for Belgian witbier?
Yes. Fermentis recommends WB-06 for wheat beers in both Belgian and German style, such as witbier and weizen.
What temperature should WB-06 ferment at?
The ideal fermentation temperature is 18–26 °C.
