SafBrew DW-17 25 g – yeast and enzymes for very dry, complex beers
SafBrew DW-17 from Fermentis is a blend of active dry yeast and enzymes for very complex beers with a fruity, woody and slightly acidic character. The enzyme (glucoamylase) breaks down sugars that ordinary brewing yeast cannot ferment, so the beer finishes very dry. DW-17 is also recommended for very high gravity worts, reaching up to 17% ABV.

How to use
Sprinkle the yeast into at least ten times its weight of sterile water or boiled and hopped wort at 25–35 °C. Leave for 15–30 minutes, stir gently and pitch the yeast cream into the fermenter. You can also pitch directly onto the wort at 20–32 °C.

How much wort does a 25 g sachet treat?
Fermentis gives 100–160 g per 100 L. 25 g is then enough for about 16–25 litres of wort.
Why does the beer finish so dry?
DW-17 contains glucoamylase, an enzyme that breaks down sugars ordinary yeast cannot ferment. That is why attenuation is 98–102%.
Do I need to rehydrate the yeast?
Fermentis recommends rehydrating in water or wort at 25–35 °C, but the yeast can also be pitched directly onto the wort at 20–32 °C.
Can I use the yeast after the best before date?
Yes. Dry yeast stored cool keeps well long past the date. Brewshop stores its dry yeast in a cold room.
How should I store the yeast?
Dry and cool, ideally below 15 °C. An opened sachet should be resealed, kept at 4 °C and used within 7 days.
