SafBrew LA-01 500 g – yeast for alcohol-free and low-alcohol beer
SafBrew LA-01 from Fermentis is a Saccharomyces cerevisiae var. chevalieri specifically selected for producing alcohol-free and low-alcohol beverages below 0.5% ABV. The yeast does not ferment maltose or maltotriose, only simple sugars such as glucose, fructose and sucrose. This keeps the alcohol low while the beer retains body and malt flavour. The aroma profile is subtle. The 500 g pack is intended for breweries.

How to use LA-01
- Direct pitching: Sprinkle the yeast evenly over the wort at fermentation temperature so it does not clump.
- Rehydration: Sprinkle the yeast into at least ten times its weight of sterile water or boiled and hopped wort at 25–29 °C. Leave for 15–30 minutes, stir gently and pitch.
Frequently asked questions about SafBrew LA-01
How does LA-01 make alcohol-free beer?
LA-01 only ferments simple sugars such as glucose, fructose and sucrose, not maltose or maltotriose. That keeps the alcohol low, and Fermentis selected the yeast for beverages below 0.5% ABV.
How much yeast do I need?
Fermentis recommends 50–80 g per hectolitre. A 500 g pack is therefore enough for roughly 6–10 hl of wort.
What temperature should LA-01 ferment at?
Fermentis gives 15–25 °C as the ideal fermentation temperature.
How long does the yeast keep?
Shelf life is 36 months from production date. Store unopened yeast below 24 °C for up to 6 months and below 15 °C for longer storage. Use opened packs within 7 days.
