Sucralose is a highly concentrated sweetener with a clean, sweet taste, a full 600 times sweeter than ordinary sugar. It dissolves easily in liquid and is often used in drinks such as cider, where it adds sweetness without fermenting further or affecting the final product. For the best flavour balance, sucralose is commonly combined with Acesulfame K. Acesulfame K gives an immediate sweetness that fades quickly, while sucralose gives a smooth, long-lasting sweet taste.
Dosage
The amount of sweetener depends on the sweetness you want and what the cider is made from. If the cider is apple-based, the fruit itself contributes natural sweetness. Recommended dosage per litre:
- Mild sweetness: 0.05 g sucralose + 0.08 g Acesulfame K
- Sweeter profile: 0.11 g sucralose + 0.10 g Acesulfame K
