Acesulfame K – fast and balanced sweetness
Acesulfame K is a powerful sweetener that provides a clean and immediate sweet taste, up to 200 times sweeter than regular sugar. It dissolves easily in liquid and is often used in cider and other beverages where it provides sweetness without further fermentation.
For a smoother and more balanced sweetness profile, Acesulfame K is often used in combination with Sucralose. Acesulfame K provides a fast sweetness that quickly fades, while sucralose provides a more sustained sweetness, resulting in a natural and harmonious taste experience.
Dosage:
The amount of sweetener depends on the desired sweetness and the raw material base of the cider. If the cider is made from apples, the fruit itself will provide natural sweetness. Here are some recommended dosages per liter:
- Mild sweetness: 0.08 g Acesulfame K + 0.05 g Sucralose
- Sweeter profile: 0.10 g Acesulfame K + 0.11 g Sucralose
With the right combination of sweeteners, you can create a well-balanced cider where the sweetness enhances the fruitiness without seeming artificial or overpowering.
