Description

Vic Secret Hop Pellets

Vic Secret is an Australian hop variety from the Hop Products Australia (HPA) breeding programme, crossed in 2000 and released in 2013. It shares its ancestry with Topaz. Vic Secret has high alpha acid and strong notes of tropical fruit, pineapple, passion fruit and a hint of pine. It is widely used in modern beer styles such as IPA, NEIPA and pale ale. The 100 g pack is suited to homebrewers.

Characteristics

  • Origin: Australia, Hop Products Australia (released 2013)
  • Use: high-alpha hop with strong aroma
  • Aroma: pineapple, passion fruit, tropical fruit, grapefruit, lime and pine
  • Beer styles: IPA, NEIPA and pale ale, but also stout and porter

How to use Vic Secret

Vic Secret changes character with timing. Early in the boil it gives bitterness and an earthy quality. Late in the boil, in the whirlpool and for dry hopping it gives fruity pineapple notes. It works well on its own, but adds extra depth together with Galaxy, Citra or Mosaic.

Frequently asked questions about Vic Secret

What aroma does Vic Secret give?

Vic Secret gives strong notes of pineapple, passion fruit and tropical fruit, with a hint of pine. The fruitiness comes through most clearly in the whirlpool and with dry hopping.

What can I use instead of Vic Secret?

Galaxy is an alternative hop with a related tropical profile.

How high is the alpha acid in Vic Secret?

BarthHaas gives a typical range of 14–21.6% for the variety. Alpha acid varies from year to year. The alpha acid for the lot you receive is stated in the product title. Use that figure when calculating bitterness.

How should I store the hops?

Store the hops cold, dark and airtight, preferably in a freezer. We keep our hops vacuum-packed in a freezer room at −18 °C, and the quality holds for several years. We prioritise hops from the two most recent harvests, but older hops can be just as good if stored correctly. Read more in the article on hop shelf life and storage from Yakima Valley Hops (PDF).
