Dark brown sugar (Cassonade Dark) 25 kg – dark brown sugar for brewing
Cassonade Dark is a dark brown sugar made from sugar crystals and candy syrup. The sugar is produced by Belgosuc in Belgium and supplied through Castle Malting in 25 kg sacks. It suits breweries and homebrewers who use a lot of sugar, for example in Belgian beer styles.
Please note: This product is only available in Norway.
Sugar adds fermentable extract, so the beer becomes stronger and drier without gaining body. The dark brown sugar also adds colour and flavour from the candy syrup.

What is dark brown sugar used for in brewing?

When do I add the sugar?
The sugar is usually dissolved in the wort towards the end of the boil. This mixes it well and makes it sterile.
How long does the sugar keep?
According to the manufacturer, the sugar has an unlimited shelf life. Brown sugar absorbs moisture and can form lumps, so the manufacturer recommends using it within 12 months.
What is the difference between light and dark Cassonade?
Cassonade Dark is the dark version, with a typical colour of 700 EBC. Cassonade Light is lighter and adds less colour.
