Cascade Cryo Hops from Yakima Chief Hops are concentrated lupulin from the hop flower, designed to give intense Cascade flavour and aroma with minimal vegetal character from the plant material. The aroma profile is floral with citrus, grapefruit and pine. The alpha acid in this lot is 12.2%.
What are Cryo Hops?
The name comes from the Greek word "kryos", meaning frost. Cryo Hops is a cryogenic process from Yakima Chief Hops that separates whole hop cones into two parts: concentrated lupulin and bract. Both parts are kept cold in a nitrogen-rich environment throughout the process, from separation to pelleting.
Cryo Hops pellets are the concentrated lupulin, containing resins and aromatic oils. They give intense hop flavour and aroma, so you can dose large amounts of alpha acids and oils without astringent flavours or vegetal material in the beer. The pellets can be used anywhere regular hops are used, but work best in the whirlpool or hop stand and for dry hopping.

About Cascade
Cascade is a classic American hop with a distinct aroma of grapefruit, citrus and flowers. BarthHaas describes pink grapefruit together with passion fruit, mango and blackcurrant, and also mentions blackberry, plum, lime and caramel.
Dosage
As a starting point when creating or adjusting a recipe, use 50% of the weight of regular pellets. In other words, 50 g of Cryo Hops gives roughly the same effect as 100 g of regular hops. Cryo Hops are particularly suited to hop-forward beers such as IPA and NEIPA.

When should I add Cryo Hops?
Cryo Hops work best in the whirlpool or hop stand, at 70–90 °C for 10–30 minutes, and for dry hopping. Dry hopping is usually done around day 7–9, but for NEIPA many brewers dry hop earlier, while the yeast is active.
Why is the alpha acid so high?
Cryo Hops are concentrated lupulin, which is where the resins and alpha acids are. That is why the alpha acid is much higher than in regular pellets of the same variety. Use 12.2%, as stated in the title, when calculating bitterness.
How should I store Cryo Hops?
Keep them cold, dark and airtight. Yakima Chief Hops recommends storage near freezing, preferably between -1 and 2 °C. Reseal an opened pack airtight, ideally vacuum-packed.
