Cascade Spectrum 1 kg – liquid hops for dry hopping
Cascade Spectrum is a liquid hop product from BarthHaas, developed for dry hopping. Spectrum is 100% natural and 100% hop derived, with no additives, solvents or carriers. It disperses in cold beer and gives higher yield, more beer to sell and less cleaning than dry hopping with pellets.

About Cascade
Cascade is a classic American hop, bred from an English Fuggle and a male plant that originated from the Russian variety Serebrianka. It was developed in a breeding programme in Oregon and released in 1972. High myrcene levels give a distinct citrus profile, and BarthHaas describes pink grapefruit combined with passion fruit, mango and blackcurrant. Cascade is a classic choice for American pale ales and blonde ales.
How to use Spectrum
- Let the product reach room temperature before use. A water bath of up to 40°C can be used. Spectrum becomes more flowable but does not melt.
- Pre-disperse Spectrum in 5–10 times the amount of cold or lukewarm deaerated water or wort before dosing.
- For most beer styles, the best dosing point is secondary fermentation, 1–2 degrees Plato before terminal gravity.
- For hazy beers, BarthHaas recommends dosing during active fermentation. This gives more fruity aromas.
- The replacement rate is 1:5 to 1:8 (Spectrum to pellets by weight). Do not use more than 1 g of Spectrum per litre.
- The first time, or when the pellet rate is above 8 g per litre, replace no more than 80% of the pellets with Spectrum.
- When dosing during conditioning or into bright beer, it is easy to overdose. Start at 0.05–0.1 g per litre and run small-scale trials first.

Spectrum contains no iso-alpha acids, but like pellets it contains unisomerised alpha acids. High or late doses can therefore increase bitterness, particularly in hazy beers.
Storage
Store Spectrum at 2–15°C, not in the freezer like regular hops. Spectrum is best used within 12 months of processing. An opened container should be blanketed with inert gas, resealed and used within one month.

Frequently asked questions about Cascade Spectrum
How many hop pellets does Spectrum replace?
BarthHaas states a replacement rate of 1:5 to 1:8 by weight, so 100 g of Spectrum can replace up to 800 g of T90 pellets. The higher the total dose, the less Spectrum is needed.
When should Spectrum be added?
Normally in secondary fermentation, 1–2 degrees Plato before terminal gravity. In hazy beers, dosing during active fermentation is recommended and gives more fruity aromas.
What is the maximum dose?
Do not use more than 1 g of Spectrum per litre. Overdosing leads to resinous hop burn, haze and higher analytical IBU.
