DistilaMax XP 500 g – dry yeast for distilling malt whisky

DistilaMax XP is a dry yeast from Lallemand for producing whisky from malted grain. The yeast is a Saccharomyces cerevisiae var. diastaticus, selected for its ability to ferment maltose, maltotriose and other sugars from malted grain. It gives a congener profile with more complexity and fruity aromas, well suited to malt whisky. The yeast is made for distilleries.

Please note: This product is only available in Norway.

DistilaMax XP tolerates high temperatures well. According to the Lallemand data sheet it performs well from 20 to 35 °C, and Lallemand recommends around 30 °C when the temperature can be controlled.

How to use DistilaMax XP

  1. Rehydrate the yeast in a clean container with clean water, 10 times the weight of the yeast, at 36–38 °C. Do not use demineralised water.
  2. Stir gently and leave for 15–20 minutes (at least 10).
  3. Add the mixture to the wash. If the temperature difference is more than 8 °C, add some wash to the yeast mixture first.
  4. Use the yeast promptly once the vacuum pack is opened.

How much DistilaMax XP do I need?

Lallemand states 0.50–1.0 g of yeast per litre of wort. The right amount depends on the distillery's production process.

Does the yeast need to be rehydrated?

Yes. Lallemand recommends rehydrating in water at 36–38 °C for 15–20 minutes.

What temperature suits DistilaMax XP?

The yeast performs well from 20 to 35 °C. If you can control the temperature, Lallemand recommends around 30 °C.

What is the difference between DistilaMax XP and GW?

XP is made for whisky from malted grain, while GW is made for grain whisky from wheat or corn.

How should the yeast be stored?

Cool and dry, away from heat and direct sunlight. Unopened, it keeps for 3 years from production.
