Eine Bayer – Munich Dunkel all-grain beer kit
Eine Bayer is an easy-drinking, fresh dark lager that combines a lightly hopped pils with a solid malt backbone. Expect flavours of wholemeal bread, biscuit, caramel, toffee and honey. The beer pairs well with food but is also great on its own. The kit is for all-grain brewers with a brewing system or kettle who mash and boil from scratch.

For quality and shelf life, the malt is supplied uncrushed. If you do not already have a grain mill, we recommend getting one so you have freshly crushed malt on brew day.
Frequently asked questions about the Eine Bayer all-grain kit
How should Eine Bayer be fermented?
The recipe calls for 4 days at 10 °C, then one day each at 13, 17 and 19 °C, and finally 7 days at 4–5 °C. The temperature rise gives the yeast time to clean up off-flavours before the beer is chilled.
Why are there three packs of yeast?
Lager yeast needs almost twice as many cells as ale yeast. Three packs of LalBrew Diamond Lager give enough yeast for the batch.
Do I need temperature control?
Yes. Fermentation starts at 10 °C and ends at 4–5 °C. A fridge or fermentation chamber with a temperature controller makes this easy.
Why is the malt uncrushed?
Once crushed, malt starts to oxidise and lose flavour and aroma. Brewshop therefore stores malt uncrushed and only crushes it when you choose crushed malt at checkout. With your own grain mill you crush the malt just before brewing.
