Go-Ferm Sterol Flash – yeast protector from Lallemand
Go-Ferm Sterol Flash from Lallemand is a natural yeast protector that is added to the rehydration water together with the dry yeast. It is based on a yeast autolysate with a high concentration and bioavailability of ergosterols, which give stronger cell membranes and better stress resistance. The product was developed for winemaking and suits wine and beer producers who want safer and more efficient fermentations.

How to use Go-Ferm Sterol Flash
- Stir Go-Ferm Sterol Flash into the rehydration water. The water should be above 15 °C.
- Add the dry yeast and stir gently.
- After 15 minutes, add the mixture to the tank and mix well.
According to Lallemand, no temperature acclimatisation of the yeast is needed before adding it.

When is Go-Ferm Sterol Flash added?

What water temperature do I need?
The rehydration water should be above 15 °C. Lallemand compares this with classic rehydration for 20 minutes at 37 °C in its trials.
Is this a yeast nutrient?
Go-Ferm Sterol Flash is a yeast protector. It is used during rehydration and supplies sterols that strengthen the cell membrane, so the yeast copes better with demanding fermentations.
How should it be stored?
Cool and dry. Once opened, the bag should be used up.
