Lalvin 71B™ is a well-known yeast strain, particularly valued for its ability to produce stable amyl aromas (esters) that enhance the fruity character in ciders made from more neutral apple varieties.
The yeast also has a unique ability to reduce the acidity in musts with high malic acid content, by partially metabolizing it. The result is a rounder and softer mouthfeel. In addition, Lalvin 71B™ can bind certain phenolic compounds in the cell wall, limiting harsh tannins and contributing to a more balanced cider profile.
