Lalvin SENSY™, developed in collaboration with INRAE and Sup Agro Montpellier, is specifically selected for its minimal production of SO₂ and H₂S. This makes it ideal for highlighting the pure fruit character in cider.
This yeast provides complex aromas with notes of citrus and tropical fruits, combined with good mouthfeel and a subtle mineral touch. It reduces acetaldehyde formation while limiting sulfur production, ensuring a cleaner and more fruity fermentation.
