What does the gauge show?
A gauge with a 250 bar scale shows the pressure in the gas cylinder itself. The working pressure to the keg is shown on a separate gauge with a much lower scale.
Why does the pressure not drop steadily as the cylinder empties?
CO2 is partly liquid in the cylinder, so the pressure stays fairly stable until the liquid is used up. When the pressure starts to drop, the cylinder is almost empty.
