Metabs 5 kg from Murphy & Son – sodium metabisulphite tablets, equivalent to Campden
Metabs are food-grade sodium metabisulphite (E223) tablets. They are a convenient way of adding measured quantities of sulphur dioxide (SO2), with no need to measure or weigh. Metabs are a preservative that stops microorganisms from growing and multiplying and prevents biological spoilage (yeast stop). Their antioxidant properties increase stability and extend the shelf life of the beer. Sodium metabisulphite releases sulphur dioxide when dissolved.

Metabs can also be used for storing oak barrels and empty casks and for controlling their microflora.
How to use Metabs
- As a preservative in beer: 10–50 ppm SO2. 1 tablet per hectolitre gives 11 ppm SO2.
- To keep empty casks microbiologically stable: 2 tablets per hectolitre, added after cleaning.
- To remove free chlorine from tap water: 1 tablet treats up to 14 hectolitres of water.
- The tablets can be mixed straight into the beer or water.

Are Metabs the same as Campden?
Yes, Metabs work like Campden. Both are metabisulphite that releases sulphur dioxide. Metabs are sodium metabisulphite in tablet form, in a large pack for breweries and producers.
How much Metabs should I use in beer?
According to the data sheet, 10–50 ppm SO2 is suitable, and 1 tablet per hectolitre gives 11 ppm. The data sheet also lists the limits for SO2 in beer and wine and when sulphites must be labelled as an allergen.
Can Metabs remove chlorine from brewing water?
Yes. According to the data sheet, 1 tablet treats up to 14 hectolitres of tap water and removes free chlorine, which can otherwise cause chlorophenolic off-flavours in beer.
Can I use Metabs with Sorbistat?
Yes. Campden and Metabs are often used together with Sorbistat. Sorbistat prevents renewed fermentation.
