Murphy & Son – finings, water treatment and enzymes for breweries
Murphy & Son supplies processing aids and additives to breweries and beverage producers. Here you will find the finings Protafloc, Super F and DeHaze, water treatment salts in 25 kg sacks, enzymes such as ALDC, AMG and Glucanase, the yeast nutrient Yeast Vit and the antifoam Refoam. Product groups
Kettle finings: Protafloc is a granular carrageenan product added in the last 10 minutes of the boil, so that proteins drop out as the wort cools. It comes as 2 kg for breweries and as a tub of 20 tablets for homebrewing.
Post-fermentation finings: Super F is a concentrated fining agent in 5 kg and 25 kg. It can be used for bottled, canned and kegged beer, including dry-hopped beer once most of the hops have been removed.
Chill haze: DeHaze is added at the start of fermentation and protects the beer against chill haze during storage.
Water treatment: Calcium sulphate (gypsum), calcium chloride flakes 77%, calcium carbonate, magnesium sulphate and AMS in 25 kg sacks. Gypsum lowers mash pH and gives a drier, more bitter character.
Enzymes: ALDC prevents diacetyl from forming and shortens maturation time. AMG converts dextrins into fermentable sugar, for very dry beers such as brut IPA and higher alcohol yield in distilling. Glucanase, Attenuaid and Staze are in the same group.
Yeast and foam: Yeast Vit in 5 kg is a yeast nutrient that shortens the lag phase and gives more consistent fermentation. Refoam, formerly Antifoam, is a silicone-based antifoam added to the kettle or fermenter.

Frequently asked questions about Murphy & Son
What is the difference between Protafloc and Whirlfloc?
Both are carrageenan products added to the kettle to drop out proteins. Protafloc is used the same way, in the last 10 minutes of the boil.
How much Protafloc do I use in a homebrew batch?
The recommended dose is 1/5 to 1/2 tablet per 25 litres. Using more than recommended can have the opposite effect and give hazy beer.
How quickly does Super F work?
At 75–175 ml per hl you can reach high clarity within 48 hours. Best results are at 5 °C.
What does ALDC do?
ALDC is an enzyme that converts alpha-acetolactate directly to acetoin, so diacetyl does not form. It shortens maturation time and is widely used in pilsner and dry-hopped pale ale.
