Sorbistat from Vinoferm is potassium sorbate (E202), a preservative that prevents yeast and mould growth in wine, cider, juice and other beverages. It is used to stabilise the drink once fermentation is complete, so it does not start fermenting again, for example when you want to sweeten the wine. Sorbistat does not kill the yeast, but prevents it from multiplying and starting a new fermentation.
In wine, Sorbistat should always be used together with an equal dose of sulphite (Campden). The granules dissolve easily in water and do not affect taste or aroma when dosed correctly.
