Mjøderiet mead kit for raspberry mead – brew your own mead at home

This mead kit was developed together with Mjøderiet and lets you brew raspberry mead at home. You get wildflower honey from Mjøderiet, the same raw material they use in their own mead, and 2 kg of raspberry purée. You decide the sweetness, volume and strength yourself.

The mead kit contains

  • Mangrove Jack's M05 Mead Yeast
  • 4.3 kg wildflower honey from Mjøderiet for the base mead and back-sweetening
  • Raspberry purée, 2 kg: 100% natural purée for intense fruitiness
  • Mangrove Jack's Mead Nutrient
  • Stabilisers: Sorbistat and Campden
  • Clearing: Super-Kleer K.C., a two-stage fining agent with kieselsol and chitosan
  • Easy-to-follow step-by-step instructions

Base mead before back-sweetening and raspberries

  • Volume: 9 litres
  • OG: 1.115
  • FG: 1.000 or lower
  • ABV: 15–17%

You can adjust the sweetness from semi-sweet to sweet. The raspberry purée, the honey for back-sweetening and the amount of water decide the final volume and strength. The result combines the depth of the honey with the fresh aroma of the raspberries.

Recommended equipment (not included)

  • Fermenter of at least 15 litres and an airlock for fermenting the must
  • Fermenter or PET or glass carboy for clearing
  • Stirring paddle
  • Hydrometer that reads up to 1.115
  • Siphon (optional)
  • Sanitizer, such as Star San or Chemipro San, for sanitizing the fermenter and equipment

Frequently asked questions about the Mjøderiet raspberry mead kit

How strong will the mead be?

The base mead finishes at 15–17% before back-sweetening and raspberries. You set the final strength yourself with water and the honey for back-sweetening.

How much mead does the kit make?

The base mead is 9 litres. The final volume depends on how much raspberry purée, honey and water you add.

Why are Sorbistat and Campden included?

They are used to stabilise the mead before back-sweetening. Campden works as a fermentation stopper, and Sorbistat prevents renewed fermentation when you add honey.

Which hydrometer do I need?

One that reads up to at least 1.115, because the must starts that high. A mead hydrometer with a 1.000–1.160 scale covers the whole range.
