Mosaic Spectrum is a liquid hop product from BarthHaas, developed specifically for dry hopping. Spectrum is 100% natural and 100% hop derived, with no additives, solvents or carriers. It disperses in beer, gives a stable and consistent hop flavour, and delivers higher yield, more beer to sell and less cleaning than dry hopping with pellets.

About Mosaic

Mosaic was developed by the Hop Breeding Company and released in 2012. It is a daughter of Simcoe and a Nugget-derived male. The aroma is complex, led by tropical fruit.

How to use Spectrum

  • Bring the product fully up to room temperature before use, for example in a water bath at up to 40 °C. It becomes more flowable, but does not melt.
  • Pre-disperse Spectrum in 5–10 times its amount of cold or lukewarm deaerated water or wort before dosing. Vigorous stirring may be needed.
  • For most beer styles the best dosing point is secondary fermentation, 1–2 °Plato before terminal gravity. For hazy beers BarthHaas recommends dosing during active fermentation, which gives more fruity aromas.
  • The replacement rate is 1:5 to 1:8 (Spectrum to pellets by weight), but use no more than 1 g of Spectrum per litre.
  • The first time, or when the pellet rate is above 8 g per litre, replace no more than 80% of the pellets with Spectrum.
  • When dosing after fermentation or into bright beer, start at 0.05–0.1 g per litre and run bench trials first. It is easy to overdose.

Spectrum contains no iso-alpha acids, but it does contain unisomerised alpha acids that can increase bitterness at high or late doses, particularly in hazy beers.

Storage

Store Spectrum at 2–15 °C, and not in the freezer as you would regular hops. Lower temperatures can cause crystallisation and make the product harder to disperse. Spectrum is best used within 12 months of processing. Blanket an opened container with inert gas, reseal it and use within 1 month.

Frequently asked questions about Mosaic Spectrum

How many hop pellets does Spectrum replace?

BarthHaas gives a replacement rate of 1:5 to 1:8 by weight, so 100 g of Spectrum can replace up to 800 g of T90 pellets. The higher the total dose, the less Spectrum is needed.

When should Spectrum be added?

Normally in secondary fermentation, 1–2 °Plato before terminal gravity. For hazy beers, dosing during active fermentation is recommended. BarthHaas has not seen any negative impact on the yeast.

What is the maximum dose?

Use no more than 1 g of Spectrum per litre. Overdosing leads to resinous hop burn, haze and higher measured IBU.

Can Spectrum be stored in the freezer?

No. Spectrum should be stored at 2–15 °C. Lower temperatures can cause crystallisation and poorer dispersion.
