Passion fruit purée from Fruits Rouges & Co in France is made from fruit harvested at the right ripeness. The purée is 100% fruit and pasteurised, so it can be poured straight into the fermenter. It suits pale ale, IPA, sour beer, wheat beer and cider where you want a clear tropical fruit flavour.

Quality
The fruit meets Fruits Rouges & Co's requirements for brix value, size, colour and pesticide residues, among other things. The final product is checked at the end of production and taste-tested to ensure flavour and colour close to fresh fruit.
Storage
Unopened packs can be stored at room temperature, but preferably at 15 °C or below.
Frequently asked questions about passion fruit purée for beer
How much fruit purée should I use?
As a rough guide, 1–4 kg per approx. 25 litres, depending on how pronounced you want the fruit flavour. For sour beers we recommend at least 2–3 kg per 25 litres.
When should I add the purée?
Usually after primary fermentation, after about a week. Then let the beer ferment for at least another week so the fruit sugar ferments out before you bottle or keg.
Does the purée need to be pasteurised?
No. The purée is already pasteurised and can be poured straight into the fermenter.
How should the purée be stored?
Unopened packs tolerate room temperature, but are best kept at 15 °C or below.
