Frequently asked questions about cane sugar
What does sugar do in beer?
Sugar ferments almost completely and adds alcohol, but no body. Small amounts can make a beer drier, for example in Belgian styles. Large amounts can give a thin, boozy beer.
Can cane sugar be used for carbonation?
Yes. The sugar can be used to carbonate beer and cider in the bottle. Calculate the amount carefully, because too much sugar gives too much pressure.
How long does the sugar keep?
Shelf life is unlimited when stored correctly. Castle Malting still recommends using it within 6 months to prevent the sugar from clumping.
