SafAle S-04 500 g – English ale dry yeast from Fermentis for breweries
SafAle S-04 is an English ale dry yeast from Fermentis, selected for its fast fermentation. It produces balanced fruity and floral notes, and because it flocculates well and forms a compact sediment, the beer is often clearer. S-04 suits a wide range of American and English ales, including hoppy beers, and is particularly well adapted to cask-conditioned beers and fermentation in cylindro-conical tanks. The 500 g pack is intended for breweries and larger batches.

How to use S-04
According to Fermentis, S-04 can be pitched directly onto the wort or rehydrated first. For direct pitching, sprinkle the yeast evenly over the surface at or above fermentation temperature, ideally while the vessel is being filled. To rehydrate, sprinkle the yeast into at least 10 times its weight of sterile water or boiled, hopped wort at 25–29 °C. Leave for 15–30 minutes, stir gently and pitch the cream into the fermenter.
Store the yeast dry and away from direct heat. It can be kept below 25 °C for up to 6 months; for longer storage Fermentis recommends below 15 °C. Opened packs should be sealed, stored at 4 °C and used within 7 days.
