SafAle S-04 from Fermentis is an English yeast strain selected for its fast fermentation profile. It produces balanced fruity and floral notes. Because it flocculates well, it tends to give beer with higher clarity. S-04 suits a wide range of American and English ales, including highly hopped beers, and is especially well suited to fermentation in conical tanks. It is regarded as the same strain as WLP007.

How to use S-04

You can sprinkle the yeast directly onto the wort in the fermenter, at or above fermentation temperature. To rehydrate, sprinkle the yeast into at least ten times its weight of sterile water or boiled and hopped wort at 25–29 °C. Leave it for 15–30 minutes, stir gently and pitch. At 50–80 g per 100 litres, one 11.5 g sachet covers roughly 14–23 litres of wort.

Store unopened yeast below 24 °C for up to 6 months, and below 15 °C for longer storage. Shelf life is 36 months from production.

What temperature should S-04 ferment at?

Fermentis gives 18–26 °C as the ideal fermentation temperature. Keep the temperature stable, as the yeast generates heat itself during the most active phase.

Do I need to rehydrate S-04?

No, S-04 can be sprinkled directly onto the wort at or above fermentation temperature. Rehydrating in sterile water or boiled wort at 25–29 °C is an alternative.

How many sachets do I need for 20–25 litres?

One sachet covers up to about 23 litres at the lowest recommended dosage. For stronger beers and larger batches, two sachets is a safe choice.

Which beer styles suit S-04?

S-04 is widely used in English styles such as bitter, porter and stout, but also in American ales and hop-forward beers. It gives clear beer because it flocculates well.
